Blanch pig trotter pieces in cold water and rinse; soak dried day lilies for 30 minutes, remove hard stems, and tie into knots.
Add water to a clay pot with the trotters and ginger; bring to a boil and skim the foam.
Reduce to low heat and simmer for 60 minutes until the trotters are very tender.
Add the day lily knots and wolfberries; simmer 20 more minutes, season with salt, and serve.
